Steamed Clams in Nectar
A welcoming mug of steamed clams in broth. As is tradition at Tillicum, the empty shells are crushed under foot to create the white pathway to the Longhouse.

Traditional Alder Fire Roasted Fish*
Fish cooked on cedar stakes around open alder wood fires, slowly baked to perfection. Clarified lemon butter and our signature Juniper Berry Seasoning added at the end of cooking.

Signature Northwest Stew
Thick meaty stew of beef and venison is full of flavors married together in a rich savory stock, combined with root vegetables and potatoes for a mouth-watering dish.

Wild Grain Harvest Rice
Combination of wild and basmati rice, cooked to perfection with onions, garlic and a fragrant vegetable stock.

Warm Whole Grain Tillicum Bread & Assorted Rolls
A rich, dark, slightly sweet bread made with a hint of molasses by our own private recipe. Served warm with butter on the side.

Field Greens Salad
Seasonal greens, dried cranberries, sunflower seeds and Oregon blue cheese. Rosemary stone-ground mustard dressing, ranch dressing, and raspberry vinaigrette available on the side.

Mustard and Raspberry dressings are gluten-free, nut-free, and vegan. Ranch dressing is gluten-free, nut-free, and includes dairy.

Polenta with Wild Mushroom Ragout
Wild Northwest mushrooms stewed with white wine and herbs served over creamy polenta.

Fresh Fruit Salad
Assorted melons, grapes, strawberries and pineapple served with a strawberry honey dipping sauce.
Gluten-free, dairy-free, nut-free. Vegan without dipping sauce.

*One of our top priorities is the sustainability of the fish we serve at the Tillicum Excursion. Because of the decline in the wild salmon population we use a combination of wild Alaskan salmon when available and farmed, all-natural Steelhead.
