Tillicum Excursion Menu


Beverage Service: Full bar service is available on the island, with both walk-up and table service. Beverage Menus and prices are located on each table in the Longhouse Dining Room. Fountain sodas, hot tea, and drip coffee are complimentary with your meal on the island.

Steamed Clams in Nectar: Enjoy a welcoming mug of steamed clams in broth as you disembark the boat. As is tradition at Tillicum, the empty shells are crushed under foot to create the white pathway to the longhouse. Gluten-free, dairy-free, nut-free.

Traditional Alder Fire Roasted Fish*: Fish cooked on cedar stakes around open alder wood fires, slowly baked to perfection. Clarified lemon butter and our signature Juniper Berry Seasoning are added at the end of cooking. Gluten-free and nut-free. If you would like your fish dairy-free and/or seasoning-free, please notify us in the comments when making your reservations.

Signature Northwest Stew: This thick meaty stew of beef and venison is full of flavors married together in a rich savory stock, combined with root vegetables and potatoes for a mouth-watering dish. Dairy-freeGluten-free, nut-free.

Wild Grain Harvest Rice: Try this wonderful combination of wild and basmati rice, cooked to perfection with onions, garlic and a fragrant vegetable stock. Gluten-free, dairy-free, nut-free, vegan.

Warm Whole Grain Tillicum Bread & Assorted Rolls: This rich, dark, slightly sweet bread is made with a hint of molasses (our own private recipe), served warm with butter on the side. Loaves to take home are available for purchase in our Gift Shop. Dairy-free, nut-free, vegan.

Field Greens Salad: Seasonal greens, dried cranberries, sunflower seeds and Oregon blue cheese. With rosemary stone-ground mustard dressing, raspberry vinaigrette, or ranch dressing served on the side. Gluten-free, nut-free, vegetarian.
Mustard and Raspberry dressings are gluten-free, nut-free, and vegan. Ranch dressing is gluten-free, nut-free, and includes dairy.

Polenta with Wild Mushroom Ragout: A collection of wild Northwest mushrooms stewed with white wine and herbs, served over creamy polenta. Gluten-free, nut-free, vegetarian.

Fresh Fruit Salad: Assorted melons, grapes, strawberries and pineapple, served with a strawberry honey dipping sauce. Gluten-free, dairy-free, nut-free, vegetarian/vegan without dipping sauce.

Blackberry Tartlette: Shortbread crust and citrus crumble baked with local blackberries. Nut-free, vegetarian.

Assorted Cookies: Enjoy an assortment of cookies - Snickerdoodle, Chocolate Chip, and Double Chocolate Chunk. Nut-free.

*One of our top priorities is the sustainability of the fish we serve at the Tillicum Excursion. Because of the decline in the wild salmon population, we use a combination of wild Alaskan salmon (when available) and farmed all-natural steelhead.
