TILLICUM EXCURSION MENU
Beverage Service: Full bar service is available on the island, with both walk-up and table service. Beverage Menus and prices are located on each table in the Longhouse Dining Room. Fountain sodas, hot tea, and drip coffee are complimentary with your meal on the island.
Steamed Clams in Nectar: As you disembark the boat, join other guests for a welcoming mug of steamed clams in broth with some carrots and onions. As is tradition at Tillicum, the used shells are crushed under foot to create the beautiful white pathway to the longhouse. Gluten-free, dairy-free, and nut-free. NOT vegetarian or vegan.
Traditional Alder Fire Roasted Fish*: Taste centuries-old tradition. Whole fish are cooked on cedar stakes around open alder wood fires. Taking approximately one hour to bake slowly to perfection, the fish retains moisture and takes on a wonderful flavor unique to this style of cooking. Clarified lemon butter and our signature Juniper Berry Seasoning are added at the end of cooking. Gluten-free and nut-free. NOT vegetarian, vegan or dairy-free; however, if you would like your fish dairy-free and/or seasoning-free, please notify us in the comments when making your reservations.
Signature Northwest Stew: This thick meaty stew of beef and venison is full of flavors married together in a rich savory stock, combined with root vegetables and potatoes for a mouth-watering dish. Dairy-free, Gluten-free, and nut-free. NOT vegetarian, or vegan-free.
Wild Grain Harvest Rice: Try this wonderful combination of wild and basmati rice, cooked to perfection with onions, garlic and a fragrant vegetable stock. Gluten-free, dairy-free, nut-free, vegetarian AND vegan.
Warm Whole Grain Tillicum Bread: This rich, dark, slightly-sweet bread is made with a hint of molasses – our own private recipe, served warm with butter on the side. Loaves are also available for purchase in our Gift Shop for you to take home. Dairy-free, nut-free, vegetarian, vegan. NOT gluten-free.
Field Greens Salad: Seasonal greens, dried cranberries, sunflower seeds, Oregon blue cheese, with rosemary stone-ground mustard dressing, raspberry vinaigrette, or ranch dressing served on the side. Gluten-free, nut-free, and vegetarian. Dairy-free and vegan unless blue cheese added by guests. Dressings are all gluten-free, nut-free, and vegetarian; ranch dressing is NOT dairy-free or vegan, but the other dressings are.
Polenta with Wild Mushroom Ragout: A collection of wild Northwest mushrooms stewed with white wine and herbs, served over creamy polenta. Gluten-free, nut-free, and vegetarian. NOT dairy-free or vegan.
Fresh Fruit Salad: Assorted Melons, grapes, strawberries and pineapple, served with a strawberry honey dipping sauce. Gluten-free, dairy-free, nut-free, and vegetarian. Vegan if honey dipping sauce not added by guests.
Blackberry Crisp: Local blackberries from Remlinger Farms, baked with a crispy topping of butter, oats, and brown sugar. Served warm with whipped cream. Nut-free, and vegetarian. NOT gluten-free, dairy-free, or vegan.
*One of our top priorities is the sustainability of the fish we serve at the Tillicum Excursion. Because of the decline in the wild salmon population, we use a combination of wild Alaskan salmon (when available) and farmed all-natural steelhead.
